Dried Okra Pods

Fresh okra pods are blanched, seasoned and dehydrated at low temperature to create a crispy and nutrient-rich snack. The characteristic flavour of the okra is fully preserved and complemented by the spices. These dried pods are an excellent ingredient for soups or a delicious snack.

Preparation and Blanching
20 minutesWash okra pods, remove stems and cut into 5 mm thick slices. Blanch in boiling water for 2 minutes, then immediately shock in ice water to preserve the colour. Drain well and allow to dry.
Seasoning
10 minutesStir olive oil, sea salt, cayenne pepper, onion powder and lemon juice into a marinade. Coat the blanched okra slices evenly and allow to marinate for 5 minutes.
Dehydrating
6-8 hoursPlace okra slices in a single layer on the dehydrator trays. Set the dehydrator to 55 °C and dry for 6-8 hours. After 4 hours, flip the trays to ensure even drying.
Quality Control and Storage
15 minutesThe dried okra pods must snap when bent and no longer feel moist. Allow to cool completely and store in airtight jars in a cool, dark place. Shelf life up to 3 weeks.
Pro Tip
Cut okra pods into evenly thin slices (approx. 5 mm) to ensure even drying and to minimise the mucilage.
