Dried Figs with Honey

Juicy figs are glazed with honey and slowly dehydrated to create an intensely sweet, caramel-like delicacy. The combination of earthy fig flavor and floral honey produces an incomparable snack. Ideal for cheese boards, desserts, or as a natural energy source.

Preparation
15 min.Wash figs and pat dry. Leave whole or halve depending on size. Score whole figs in a cross pattern at the bottom.
Applying glaze
10 min.Stir together honey, cinnamon, vanilla extract and lemon juice. Brush figs all over with the mixture and let rest for 10 minutes to allow the glaze to absorb slightly.
Dehydrating
12-18 hrs.Arrange figs on dehydrator trays, cut side up. Dehydrate at 57-60 °C until figs are shriveled, soft-leathery and no longer moist. Check every 4 hours.
Storing
30 min.Allow figs to cool completely and store in airtight jars in a cool, dark place. Shelf life up to 6 months. Optionally, drizzle dried figs lightly with honey again before storing.
Pro Tip
Lightly score whole figs at the bottom to allow moisture to escape more easily and reduce drying time.
