Dried Figs

Home-dried figs are an aromatic and natural sweet treat made by gentle dehydrating. The high sugar content of figs caramelizes slightly, giving them a special sweetness. They are excellent as a snack or for cheese boards.

Preparation
15 min.Rinse figs under running water, remove stems. Halve large figs, quarter very large ones. Drizzle with a little lemon juice and optionally dust lightly with vanilla sugar.
Arranging
5 min.Place figs cut-side up on the dehydrator trays. Leave enough space between pieces for air to circulate well.
Dehydrating
18-24 hoursSet dehydrator to 55-60 °C and dry the figs for 18-24 hours. Rotate trays halfway through. The figs are done when they are soft and leathery with no moist interior.
Storage
5 min.Let figs cool completely and store in airtight containers or vacuum bags. Stored cool and dry, they keep for several months.
Pro Tip
Score large whole figs lightly on top so moisture can escape more easily, reducing drying time.
