Chocolate-Dipped Dried Strawberries

Fresh strawberries are gently dehydrated until they develop a concentrated, intense sweetness, then dipped in dark chocolate. The combination of tangy-sweet strawberries and bittersweet chocolate creates a luxurious snack. An elegant treat that delights as a gift or dessert topping.

Preparation
15 minutesWash strawberries, carefully pat dry, and remove the hulls. Halve larger strawberries, leave smaller ones whole. Optionally sprinkle lightly with raw sugar.
Dehydrating
8-14 hoursPlace strawberries cut-side up on dehydrator trays. Dehydrate at 55-65 °C until the strawberries have shrunk considerably and are sticky and leathery. Check regularly.
Chocolate Dipping
20 minutesMelt dark chocolate with coconut oil in a double boiler and allow to cool to about 45 °C. Dip dried strawberries halfway into the chocolate and place on parchment paper. Sprinkle with sea salt flakes.
Setting & Storage
30-60 minutesAllow chocolate to set at room temperature or in the refrigerator. Store in airtight containers, separated by parchment paper, in a cool, dry place for up to 3 weeks.
Pro Tip
Select uniformly sized strawberries for consistent drying time. After dipping in chocolate, allow to set in the refrigerator and do not stack on top of each other.
