Pre-cooked edamame beans are refined with sea salt and Japanese-inspired spices and dried into crispy snacks in the dehydrator. The protein-rich soybeans retain their green colour and nutty flavour through the gentle drying process. An ideal on-the-go snack that is rich in protein and essential amino acids.

Ingredients(for 1 kg)

Shelled edamame beans1000 g
Sea salt12 g
Sesame oil15 ml
Soy sauce20 ml
Ground ginger5 g
Wasabi powder4 g

Instructions

Preparation

30 minutes

Cook frozen edamame according to package instructions and remove from pods. Rinse beans thoroughly under cold water, dry with kitchen paper and allow to air dry for 20 minutes.

Preparing Marinade and Seasoning

15 minutes

Stir sesame oil, soy sauce, ground ginger and wasabi powder into a marinade. Add the dry edamame beans, mix well and allow to marinate for 10 minutes. Then season with sea salt.

Dehydrating

10-14 hours

Spread marinated edamame in a single layer on the dehydrator trays. Set the dehydrator to 60 °C and dry for 10-14 hours. Turn the beans every 3-4 hours to ensure even drying.

Quality Check and Storage

20 minutes

The dried edamame must be completely hard and crispy with no soft spots. Allow to cool completely and store in airtight jars or bags for up to 3 weeks at room temperature.

Pro Tip

Make sure edamame are truly completely dry before seasoning, as excess moisture dilutes the spices and significantly extends the drying time.
