Fresh dates can be transformed into sweet, shelf-stable dried dates through gentle dehydrating. Slow drying at low temperature preserves the natural nutrients and intensifies the caramel-like sweetness. The result is a premium natural snack without any additives.

Fresh dates1000 g
Fine sea salt1 g
Ground cardamom1 g

Preparation

20 min.

Wash and thoroughly dry the dates. Cut lengthwise, remove the pit and open the date slightly. Optionally sprinkle with a small pinch of cardamom and sea salt.

Arranging

5 min.

Distribute opened dates cut-side up on the dehydrator trays. Ensure the dates do not overlap.

Dehydrating

12-16 hours

Set dehydrator to 55-65 °C and dry the dates for 12-16 hours. They are ready when leathery and slightly tacky, but no longer have a moist center.

Cooling and Packaging

30 min.

Let dates cool completely on a rack, then pack in airtight containers. Stored cool and dry, they keep for up to 6 months.

Pro Tip

Do not dry dates above 65 °C, otherwise the natural sugars will caramelize and the dates will become too hard.
