Dried Apricots

Home-dried apricots without sulfur impress with their intense aroma and natural color. Slow dehydrating at low temperature preserves valuable vitamins and flavor compounds. Unlike commercial products, they are free of additives.

Preparation
20 min.Wash apricots thoroughly, halve and pit them. Add lemon juice to water and soak the apricot halves in it for 5 minutes to reduce oxidation.
Draining and Arranging
10 min.Remove apricots from the lemon bath, drain well and place cut-side up on the dehydrator trays. Maintain spacing between halves.
Dehydrating
10-14 hoursSet dehydrator to 55-60 °C. Dry the apricots for 10-14 hours until they are soft and leathery with no moist core.
Conditioning and Storage
24-48 hoursCondition dried apricots in a loosely sealed jar for 24-48 hours, shaking daily. Then store airtight in dark containers at room temperature.
Pro Tip
For even drying, place the halves cut-side up on the trays and do not overlap them.
