Dried Pineapple Rings

Dried pineapple rings are a natural, sugar-rich snack with an intense tropical aroma. The slow drying process lightly caramelizes the natural fruit sugars, giving the snack a pleasantly sweet note. They are excellent in granola, as a baking ingredient, or enjoyed plain.

Preparation
20 min.Peel the pineapple, remove the tough core with a round cutter or knife, and slice into uniform 5-6 mm thick rings. Briefly dip rings in lemon water.
Seasoning
5 min.Lightly dust the drained rings with cinnamon and optionally coconut sugar. Distribute the seasoning evenly on both sides.
Drying
10-14 hrs.Arrange pineapple rings on dehydrator trays without overlapping and dry at 57-60 °C. Flip every 4 hours until the rings are leathery-chewy and no longer sticky.
Storage
30 min. cooling timeAllow to cool completely and store in an airtight jar or vacuum-sealed bag. Shelf stable at room temperature for up to 3 weeks, refrigerated for up to 2 months.
Pro Tip
For even drying, flip the rings every 4 hours and rotate the dehydrator trays. A mandoline slicer produces particularly uniform slices.
