Dried pineapple is a sweet, energy-rich snack ideal for hiking or as a muesli ingredient. Drying concentrates the fruit sugars and intensifies the tropical aroma. A thin, uniform slice thickness is the key to evenly dried rings.

Ingredients(for 1 kg)

Fresh pineapple (peeled and cored)1000 g
Lemon juice30 ml
Water (for lemon bath)500 ml
Ground cinnamon (optional)2 g

Preparation

20 minutes

Peel pineapple, remove the hard core and cut into even 5-8 mm thick slices. Mix lemon juice with water in a bowl. Soak pineapple slices in it for 2-3 minutes, drain well and optionally dust with cinnamon.

Drying

10-16 hours

Spread pineapple slices on dehydrator trays without overlapping. Set dehydrator to 55-60 °C. Flip slices halfway through the drying time. Dried pineapple is done when it is leathery-chewy with no moist centre remaining.

Conditioning and Storage

1-2 days

Allow slices to cool and condition loosely in a jar for 1-2 days – shake daily to distribute any remaining moisture evenly. Then store airtight at room temperature for up to 3 months.

Pro Tip

Pre-treating with lemon juice prevents browning and gives the dried slices a pleasant freshness.
