Chicken is marinated in a typical Greek spice blend of oregano, thyme, and garlic, then cooked in a smoker. The combination of Mediterranean herbs and mild fruit wood smoke creates an irresistibly aromatic result. Perfect for Greek pita wraps with tzatziki and fresh tomatoes.

Ingredients(for 1 kg)

Dried oregano6 g
Dried thyme3 g
Garlic powder5 g
Sweet paprika powder5 g
Sea salt16 g
Ground black pepper3 g
Olive oil25 ml
Lemon juice15 ml

Instructions

Prepare marinade and marinate

10 minutes + 3-8 hours resting time

Whisk together olive oil, lemon juice, and all spices to make a marinade. Coat the chicken completely and marinate covered in the refrigerator.

Smoking

2-3 hours

Bring smoker to 130-150 °C. Add apple and alder wood. Place chicken on the grate and smoke until a core temperature of 82-85 °C is reached.

Slicing and serving

10 minutes

Let the smoked chicken rest for 10 minutes, then cut across the grain into thin slices. Serve with warm pita bread, tzatziki, onions, and tomatoes.

Pro Tip

For a more authentic texture, smoke in one piece and slice thin only afterwards – this keeps the meat juicier.
