Smoked Tofu Teriyaki

Firm tofu is marinated in an authentic teriyaki glaze and then hot smoked, creating a wonderfully caramelized surface. The smoky flavor of apple wood pairs perfectly with the sweet and savory teriyaki sauce. This recipe is excellent as a main dish served with rice or noodles.

Instructions
Preparing the tofu
1 hourRemove the firm tofu from the packaging, wrap in cloths, and press with a heavy object for at least 1 hour to remove excess liquid. Then cut into uniform slices or cubes.
Marinating
4 hours to overnightCombine all marinade ingredients and submerge the pressed tofu. Marinate covered in the refrigerator, turning occasionally so all sides absorb the marinade evenly.
Smoking
2-3 hoursPreheat the smoker with apple and maple wood chips to 110-125 °C. Place the marinated tofu on the grate and smoke until it has a golden-brown, slightly caramelized surface. In the last half hour, brush the remaining marinade on as a glaze.
Resting and serving
5 minutesLet the tofu rest for 5 minutes, then garnish with sesame seeds and spring onions. Serve with steamed rice and smoked vegetables.
Pro Tip
Press the tofu for at least one hour before marinating – this helps it absorb the teriyaki marinade better and achieve a firmer texture when smoked.
