Firm tofu is marinated in a sweet-salty teriyaki marinade and then hot-smoked. The smoking process gives the tofu a golden-brown crust and a deep, smoky flavor. Cherry wood provides a fruity note that perfectly complements the sweetness of the teriyaki glaze.

Ingredients(for 1 kg)

Soy sauce80 ml
Mirin (sweet rice wine)40 ml
Honey30 g
Sesame oil15 ml
Garlic, minced10 g
Ginger, grated8 g
Rice vinegar20 ml

Preparation

30 min + 2-12 hrs marinating

Slice or cube tofu into 2 cm pieces and press for 30 minutes. Mix all marinade ingredients, add tofu and marinate covered in the refrigerator.

Smoker Preparation

20 min

Preheat smoker to 110-120 °C. Soak cherry and apple wood chips for 20 minutes. Remove tofu from marinade, drain and pat dry. Reserve remaining marinade for basting.

Smoking

2-3 hrs

Smoke tofu on an oiled grate at 110-120 °C. After 1 hour, baste with remaining marinade and repeat after another 30 minutes. Tofu is done when it has a golden-brown color and reaches an internal temperature of 74-77 °C.

Pro Tip

Press the tofu before marinating: press for at least 30 minutes under a heavy object to remove excess moisture. This allows it to absorb more marinade and achieve better smoke penetration.
