Smoked Teriyaki Tofu

Firm tofu is marinated in a sweet-salty teriyaki marinade and then hot-smoked. The smoking process gives the tofu a golden-brown crust and a deep, smoky flavor. Cherry wood provides a fruity note that perfectly complements the sweetness of the teriyaki glaze.

Instructions
Preparation
30 min + 2-12 hrs marinatingSlice or cube tofu into 2 cm pieces and press for 30 minutes. Mix all marinade ingredients, add tofu and marinate covered in the refrigerator.
Smoker Preparation
20 minPreheat smoker to 110-120 °C. Soak cherry and apple wood chips for 20 minutes. Remove tofu from marinade, drain and pat dry. Reserve remaining marinade for basting.
Smoking
2-3 hrsSmoke tofu on an oiled grate at 110-120 °C. After 1 hour, baste with remaining marinade and repeat after another 30 minutes. Tofu is done when it has a golden-brown color and reaches an internal temperature of 74-77 °C.
Pro Tip
Press the tofu before marinating: press for at least 30 minutes under a heavy object to remove excess moisture. This allows it to absorb more marinade and achieve better smoke penetration.
