Instructions

1

Prepare Marinade

10 Min.

Mix soy sauce, smoked paprika, liquid smoke, maple syrup and black pepper into an even marinade. Pierce seitan multiple times with a toothpick to allow the marinade to penetrate deeply.

2

Marinating

8 Std.

Submerge seitan completely in the marinade, vacuum seal or place in a tightly sealed bag and refrigerate overnight.

3

Shaping and Smoker Preparation

20 Min.

Remove seitan from marinade, pat dry and wrap firmly with kitchen twine into a compact piece. Preheat smoker with beech and alder to 110-120°C.

4

Smoking

3 Std.

Place seitan on the smoker grate and smoke for 3 hours at a constant temperature. Brush with remaining marinade every 60 minutes for a glossy, savory crust.

5

Resting and Slicing

15 Min.

Let seitan rest in the twine for 15 minutes, then remove twine and slice thinly. Serve as deli slices on bread, in sandwiches or as a side dish.

Pro Tip

Wrap seitan tightly with kitchen twine into shape before smoking – this keeps a compact, sliceable texture just like real ham.
