Smoked Seitan Smoked Ham Alternative

Homemade seitan is marinated in a savory ham-style marinade and hot-smoked to create a strikingly realistic smoked ham alternative.

Instructions
Prepare Marinade
10 Min.Mix soy sauce, smoked paprika, liquid smoke, maple syrup and black pepper into an even marinade. Pierce seitan multiple times with a toothpick to allow the marinade to penetrate deeply.
Marinating
8 Std.Submerge seitan completely in the marinade, vacuum seal or place in a tightly sealed bag and refrigerate overnight.
Shaping and Smoker Preparation
20 Min.Remove seitan from marinade, pat dry and wrap firmly with kitchen twine into a compact piece. Preheat smoker with beech and alder to 110-120°C.
Smoking
3 Std.Place seitan on the smoker grate and smoke for 3 hours at a constant temperature. Brush with remaining marinade every 60 minutes for a glossy, savory crust.
Resting and Slicing
15 Min.Let seitan rest in the twine for 15 minutes, then remove twine and slice thinly. Serve as deli slices on bread, in sandwiches or as a side dish.

Wrap seitan tightly with kitchen twine into shape before smoking – this keeps a compact, sliceable texture just like real ham.
