Smoked Garlic – Whole Bulbs

Whole garlic bulbs are slowly hot-smoked over alder wood until tender, caramelized and deeply aromatic.

Preparation
10 Min.Cut 1 cm off the top of each bulb, drizzle cut surfaces with olive oil, sprinkle with sea salt and place a thyme sprig on top of each bulb.
Prepare smoker
15 Min.Set smoker to 110-120°C and add alder wood chunks or chips to the coals. Wait for stable smoke before placing the garlic inside.
Smoking
2-3 Std.Place garlic bulbs cut-side up directly on the grate and smoke for 2 to 3 hours until the cloves are golden brown and soft when pressed.
Rest and serve
10 Min.Let bulbs cool for 10 minutes, then squeeze out the cloves and serve immediately or store submerged in olive oil.
Pro Tip
The smoked cloves can be squeezed directly from the skin and used as a bread spread or blended into sauces and marinades – stored submerged in oil in the fridge they keep for up to 2 weeks.
