Smoked Cauliflower Tikka

Cauliflower is marinated in a spiced tikka marinade and then hot smoked until tender and aromatic. The smoke adds a deep, complex note that harmonizes perfectly with the Indian spices. Ideal as a main dish or side.

Preparation
15 minutes + 2-12 hours marinating timeDivide cauliflower into large florets. Mix all marinade ingredients, pour over the cauliflower, mix well, and marinate covered in the refrigerator.
Smoking
60-90 minutesPreheat smoker to 120-140 °C. Spread cauliflower on the grate and smoke with cherry and apple wood until soft and reaching a core temperature of 85-90 °C.
Resting and Serving
5 minutesLet the cauliflower rest for 5 minutes, garnish with fresh cilantro and a squeeze of lemon juice, and serve immediately.
Pro Tip
Briefly grill the marinated cauliflower at high heat before smoking to create nice roasted flavors and grill marks.
