Preparation
10 minutesBring vanilla beans to room temperature and lay them on a fine wire rack or perforated tray so smoke can circulate from all sides.
Cold Smoking
2-3 hoursConfigure smoker setup for a maximum of 25 °C. Mix apple and cherry wood chips and fill cold smoke generator. Insert vanilla beans and smoke for 2 to 3 hours. The beans should develop a slightly golden-brown tint.
Drying and Storage
24 hoursLet smoked vanilla beans air dry for 24 hours, then store in an airtight jar or together with sugar.
Pro Tip
Store vanilla beans after smoking in an airtight jar with some sugar – the sugar absorbs the smoky aroma, creating smoked vanilla sugar as a byproduct.
