Ripe plum tomatoes are marinated with olive oil and herbs, then smoked at low temperature. The smoke aroma greatly intensifies the natural umami flavor of the tomatoes. Ideal for sauces, salsa, or as a side dish.

Plum tomatoes1000 g
Olive oil30 ml
Sea salt10 g
Black pepper3 g
Fresh thyme5 g

Preparation

30 minutes

Wash and halve tomatoes, lightly hollow out the core with a spoon. Drizzle with olive oil, season with salt, pepper, and thyme leaves. Slice garlic thinly and place on top of tomatoes.

Smoking

2-3 hours

Preheat smoker to 90-110 °C. Place tomatoes cut-side up on the smoking rack. Use cherry and apple wood chips. Smoke tomatoes for 2-3 hours until soft and the skin slightly shrinks.

Cooling and Storage

15 minutes

Remove tomatoes from the smoker and let cool briefly. Store in the refrigerator for up to 5 days or preserve in olive oil for longer shelf life.

Pro Tip

Place tomatoes cut-side up on the smoking rack so the juice doesn't run off and the smoke flavor is better absorbed.
