Smoked Sweet Potatoes with Maple Glaze

Whole sweet potatoes are slowly cooked in the smoker, gaining a wonderfully smoky note that beautifully complements their natural sweetness. A maple syrup glaze provides a caramelized surface in the last smoking phase. This recipe is excellent as a side dish or vegetarian main course.

Ingredients(for 1 kg)

Maple syrup40 ml
Olive oil20 ml
Sea salt8 g
Coarsely ground black pepper4 g
Ground cinnamon3 g
Cayenne pepper2 g

Preparation

10 minutes

Scrub sweet potatoes thoroughly under running water. Rub with olive oil, season with salt and pepper. Mix maple syrup, cinnamon and cayenne pepper into a glaze and set aside.

Smoking

1.5-2 hours

Preheat smoker to 120-150 °C and add apple and maple wood chips. Place sweet potatoes directly on the grate and smoke over indirect heat until they start to soften and reach a core temperature of approximately 80 °C.

Glazing and finishing smoke

30-60 minutes

Score the surface of the sweet potatoes and generously brush with the maple glaze. Smoke for another 30-60 minutes until the glaze is caramelized and the core temperature reaches 95-98 °C. Rest for 10 minutes before serving.

Pro Tip

Scoring the surface of the sweet potato in the last hour allows the glaze to penetrate deep inside, creating a particularly intense flavor experience.
