Smoked Sweet Potato Chipotle

Sweet potatoes are rubbed with a spicy chipotle seasoning blend and smoked at medium heat until caramelized and tender. The sweet natural flavor of the potato harmonizes beautifully with the smoky chipotle aroma. This versatile side dish pairs as well with pulled pork as with vegetarian dishes.

Preparation
15 minutesWash sweet potatoes, dry and pierce all over with a fork. Mix all dry spices together. Rub potatoes with olive oil and then evenly apply the spice mixture to all sides.
Preheating the smoker
20-25 minutesHeat smoker to 120-135 °C. Place hickory and apple wood chips in the smoker box. Ensure a consistent temperature and stable smoke production before placing the potatoes inside.
Smoking
3-4 hoursPlace seasoned sweet potatoes directly on the rack. Smoke at 120-135 °C until a core temperature of 90-95 °C is reached and the potatoes feel soft when pierced with a knife. After 2 hours, brush with a mixture of butter and a little chipotle powder.
Serving
5 minutesCut sweet potatoes lengthwise, refine with a little butter and a splash of fresh lime juice. Top with crème fraîche and fresh cilantro as desired and serve immediately.
Pro Tip
Brush the sweet potatoes with a little butter at the peak of cooking time to get a shiny, caramelized skin. For extra heat, additional fresh chipotle powder can be sprinkled on top.
