Smoked Shiitake Asian Soy-Sesame

Juicy shiitake mushrooms marinated in a savory soy-sesame mixture and then hot smoked to perfection.

Instructions
Marinade
2 Std.Mix soy sauce, sesame oil, grated ginger and pressed garlic. Add shiitake mushrooms to the marinade and refrigerate for at least 2 hours.
Preparation
15 Min.Preheat smoker to 110-120°C. Remove mushrooms from marinade, let drain and arrange on the grill grate. Sprinkle with sesame seeds.
Smoking
45-60 Min.Smoke mushrooms at 110-120°C with cherry and apple wood for about 45-60 minutes until they slightly shrink and are intensely aromatic.
Serving
5 Min.Serve smoked shiitake warm or cold, drizzle with fresh sesame and a little soy sauce. They pair excellently with rice or noodle dishes.
Pro Tip
Do not smoke the mushrooms too long to keep them juicy – once they start to slightly shrink, they are perfect.
