Mediterranean Smoked Sardines

Fresh sardines are marinated in a Mediterranean herb-olive oil marinade and hot smoked over olive wood and rosemary. Garlic, lemon and fresh herbs give the small fish an intense southern aroma. This recipe is easy to prepare and delivers an impressively flavorful result.

Preparation
15 minutesGut the sardines and wash thoroughly under cold water. Finely chop the garlic and stir together with olive oil, lemon juice, rosemary, thyme, chili flakes and salt to create a marinade.
Marinating
1-2 hoursPlace sardines in the marinade and let rest covered in the refrigerator. Then drain on a rack and allow to air dry for 30 minutes.
Smoking
1-1.5 hoursPreheat the smoker with olive wood chips and fresh rosemary sprigs to 100-120 °C. Smoke sardines on a fine-mesh rack until the skin is golden brown and crispy and the internal temperature reaches 60-65 °C.
Pro Tip
Smoke the sardines on a fine-mesh smoking grid or lying on fresh lemon slices so they don't fall through the grate while absorbing additional flavor.
