Beets800 g
Balsamic Cream40 ml
Olive Oil25 ml
Sea Salt5 g
Fresh Thyme8 g
Black Pepper3 g

Instructions

Preparation

20 Min.

Peel beets and cut into approx. 1 cm thick slices. Mix with olive oil, salt, pepper and fresh thyme leaves and marinate for 15 minutes.

Prepare Smoker

15 Min.

Heat smoker to 150-170°C and add cherry and alder wood chips. Cherry wood provides a fruity smoke note that perfectly complements the beets.

Smoking

75-90 Min.

Spread beet slices on the rack without overlapping. Smoke with the lid closed for about 75-90 minutes until soft and slightly caramelized.

Glazing and Finishing

15 Min.

In the last 15 minutes, brush balsamic cream evenly onto the slices and let it caramelize. Serve garnished with fresh thyme.

Pro Tip

Wear disposable gloves when peeling to avoid staining your hands. Apply the balsamic only in the last 15 minutes to prevent burning.
