Smoked King Oyster Mushrooms Thyme Butter

Hearty king oyster mushrooms brushed with aromatic thyme butter and smoked into an elegant side dish highlight.

Thyme Butter
10 Min.Bring butter to room temperature. Pick thyme leaves, finely chop garlic and mix both with soft butter and sea salt into a smooth herb butter.
Preparation
20 Min.Halve king oyster mushrooms lengthwise, score in a diamond pattern with a fork and generously rub with thyme butter. Let rest for 20 minutes.
Smoking
40-50 Min.Preheat smoker to 110-125°C, add alder and apple wood chips. Place king oyster mushrooms on the grate and smoke for 40-50 minutes, basting once with remaining butter halfway through.
Serving
5 Min.Serve smoked king oyster mushrooms immediately, garnish with fresh thyme leaves and enjoy as a side dish or on sourdough bread.
Pro Tip
Lightly pierce the mushrooms with a fork before smoking so the thyme butter penetrates deeper.
