Sweet carrots glazed with maple syrup and flavored with thyme become a smoky highlight from the smoker.

Ingredients(for 0.5 kg)

Carrots (medium-sized)700 g
Maple Syrup45 ml
Olive Oil20 ml
Fresh Thyme10 g
Sea Salt5 g
Black Pepper2 g

Preparation

25 Min.

Peel carrots and halve lengthwise. Rub with olive oil, sea salt and pepper and let rest at room temperature for 20 minutes.

Prepare Smoker

15 Min.

Heat smoker to 150-165°C and use apple and maple wood chips. The fruity wood aromas perfectly complement the sweetness of the carrots and maple syrup.

Smoking

60-70 Min.

Place carrots cut-side up on the rack and distribute fresh thyme sprigs on top. Smoke for about 60-70 minutes until soft but still slightly firm to the bite.

Glazing and Finishing

15 Min.

In the last 15 minutes, brush maple syrup evenly onto the carrots and keep the lid closed until the glaze is slightly caramelized. Plate with fresh thyme.

Pro Tip

Choose carrots of similar thickness so they cook evenly. Heat the maple syrup with a little butter before brushing it on so it adheres better.
