Smoked Cream Cheese Bread Spread

A velvety bread spread made from cold-smoked cream cheese and herbs, distinguished by a delicate smoky flavor.

Preparation
15 Min.Remove cream cheese from packaging, place on a rack with baking paper and let it stand open at room temperature for 15 minutes until the surface is slightly dry.
Smoking
45-60 Min.Cold smoke the cream cheese at 15-18°C for 45-60 minutes using alder and apple wood. Monitor the temperature carefully to prevent the cheese from melting.
Resting
2 Std.Cover the smoked cream cheese and let it rest in the refrigerator for at least 2 hours so the smoky flavor can develop.
Preparing the Spread
10 Min.Finely slice chives, very finely chop or press garlic. Mix cream cheese with chives, garlic, salt and pepper until creamy.
Serving
5 Min.Fill finished cream cheese into a jar or bowl, garnish with a little chives and serve on fresh bread or crackers. Store cool and consume within 3 days.
Pro Tip
Smoke the cream cheese on a sheet of baking paper with small holes so the smoke penetrates from below but the cheese does not fall through the grate.
