Ingredients(for 1 kg)

Fresh Lime Juice40 ml
Red Chili Powder8 g
Garlic Powder5 g
Sea Salt12 g
Olive Oil25 ml
Lime Zest, grated5 g
Brown Sugar6 g

Instructions

Preparation

15 minutes

Peel and devein shrimp, leaving the tail on. Combine all marinade ingredients and coat the shrimp evenly.

Marinating

30-60 minutes

Let marinated shrimp rest covered in the refrigerator. Bring to room temperature before smoking and thread onto metal skewers or a smoking rack.

Smoking

20-30 minutes

Preheat smoker to 100-120 °C with apple and mesquite chips. Smoke shrimp until completely pink, slightly curled, and internal temperature reaches 60-65 °C. Serve immediately.

Pro Tip

Do not smoke shrimp too long – they quickly become dry and rubbery. As soon as they are completely pink and slightly curled, remove them from the smoker immediately.
