Smoked Cashews with Curry

Tender cashew nuts are marinated with an aromatic curry spice blend and coconut oil, then hot-smoked. The mild flavor of apple wood complements the exotic spices without overpowering the delicate nut aroma. The result is crispy, spiced nuts with an enticing smoky flavor.

Marinade
20 minutesMelt coconut oil and mix in a large bowl with curry powder, turmeric, sea salt, brown sugar, and chili flakes. Add cashew nuts and mix thoroughly until all nuts are evenly coated. Let rest for 20 minutes.
Smoking
1-1.5 hoursPreheat smoker to 115-125 °C and add apple and alder wood chips. Spread cashews in a single layer on parchment paper or a wire rack. Smoke for 1 to 1.5 hours, turning every 20 minutes.
Cooling
15 minutesRemove smoked cashews from the smoker and let them cool completely on fresh parchment paper. The nuts will become crispy as they cool. Store in an airtight container.
Pro Tip
Do not smoke cashews too long or at too high a temperature, as they can quickly become bitter. A maximum temperature of 125 °C and a smoking time of 1 to 1.5 hours is optimal.
