Preparing the Tabasco Butter
10 minutesThoroughly combine softened butter with Tabasco sauce, garlic powder, salt, parsley, and lemon juice. Refrigerate the finished Tabasco butter until needed.
Opening the Oysters
15-20 minutesUsing an oyster knife and a protective glove, carefully open each oyster at the hinge. Remove the flat top shell and leave the oyster in the deep bottom shell. Take care not to spill the liquid.
Smoking
15-20 minutesPreheat smoker to 110-130 °C with hickory and apple wood chips. Place about half a teaspoon of Tabasco butter on each oyster. Stabilize oysters on a bed of coarse sea salt or aluminum foil in the smoker and smoke until the edges curl and the butter is fully melted and slightly caramelized.
