Smoked Artichokes Lemon

Artichoke hearts are marinated in an aromatic lemon herb marinade and then cold smoked. The smoke from alder wood gives the artichokes a delicate, nutty depth. Perfect as an antipasto or side dish with grilled fish.

Preparation
20 minutes + 2 hours marinatingHalve artichoke hearts and place in lemon water. Combine all marinade ingredients in a bowl. Drain artichokes, coat well with the marinade, and refrigerate covered for at least 2 hours.
Preheating the smoker
20-30 minutesPreheat the smoker to 100-110 °C. Place alder wood chips and a few pieces of lemon wood or lemon peel in the smoker box and allow to soak. Ensure a stable smoke production before placing the artichokes inside.
Smoking
2-3 hoursArrange marinated artichoke hearts cut-side up on the grill rack. Smoke at 100-110 °C until the artichokes are tender and have reached a core temperature of 65-70 °C. Baste occasionally with remaining marinade.
Resting and Serving
10 minutesAllow smoked artichokes to rest for 10 minutes, then drizzle with fresh lemon juice and garnish with fresh thyme leaves. Serve warm or at room temperature.
Pro Tip
Marinate the artichokes for at least 2 hours before smoking to allow the flavors to penetrate deeply. A cast iron grate prevents the small pieces from falling into the smoker.
