Smoked Artichokes with Lemon Herb Marinade

Artichokes are halved, pre-cooked, and then smoked in the smoker with a lemon herb marinade. The smoke flavor of beech wood gives the tender artichoke heart a complex depth. This recipe transforms the classic vegetable into an elegant, smoky-aromatic dish.

Instructions
Pre-cooking
25-30 minutesWash artichokes, remove outer hard leaves, and trim stems to 3 cm. Pre-cook in boiling salted water with lemon juice for 20-25 minutes. Allow to cool, halve, and remove the choke with a spoon.
Marinating
30 minutesWhisk together olive oil, lemon juice, garlic, thyme, lemon zest, salt, and pepper into a marinade. Generously brush the artichoke halves with the marinade, working it between the leaves as well. Allow to marinate for at least 30 minutes.
Smoking
1-1.5 hoursPreheat smoker to 120-140 °C with beech and lemon wood chips. Place artichoke halves cut-side up on the grate. Smoke for 1-1.5 hours until the core temperature reaches 85-90 °C and the leaves are lightly browned. Brush with marinade again halfway through.
Pro Tip
Pre-cooking in salted water with a splash of white wine and bay leaves gives the artichokes an additional flavor base that wonderfully complements the smoke aroma.
