Smoked Artichokes with Lemon

Tender artichoke hearts are marinated with fresh lemon and herbs and smoked in the smoker into a Mediterranean highlight.

Preparation
20 Min.Clean artichokes, remove outer tough leaves and trim tips with scissors. Halve artichokes and immediately place in water with lemon juice. Prepare marinade from olive oil, pressed garlic, lemon juice, lemon zest, thyme and salt.
Blanching
25 Min.Blanch artichokes in boiling salted water for 5 minutes, shock in cold water and drain well. Then marinate for at least 20 minutes.
Preheat smoker
15 Min.Heat smoker to 110-120°C. Use alder wood chips and place some lemon peels directly on the embers for a delicate citrus aroma.
Smoking
1 Std.Place artichoke halves cut side up on the grate and smoke for 1 hour at constant temperature until the leaves are lightly browned and tender.
Serving
5 Min.Drizzle smoked artichokes with fresh lemon juice and serve with a dip made from Greek yogurt, lemon zest and herbs.
Pro Tip
Briefly blanch artichokes before smoking (5 minutes) so they cook evenly and absorb the smoke flavor better. Place lemon peels directly on the embers for extra citrus aroma.
