Mango Passion Fruit Leather

This tropical fruit leather combines the sweet creaminess of mango with the exotic, tangy note of passion fruit. The result is an intensely aromatic, chewy, and naturally sweetened fruit leather. It makes an excellent healthy on-the-go snack.

Preparation
15 minutesPeel ripe mangoes, remove seeds, and roughly dice. Combine with passion fruit pulp, lemon juice, honey, and a pinch of salt in a high-speed blender and process into a completely smooth, homogeneous puree.
Spreading
10 minutesLine dehydrator trays with non-stick dehydrator sheets or parchment paper. Spread the puree evenly in a 4-5 mm layer onto the sheets. Leave the edges slightly thicker as they dry faster.
Dehydrating
8-10 hours at 60 °CSet the dehydrator to 60 °C and dry the fruit puree for 8-10 hours. After about 5 hours, carefully peel the fruit leather off the sheet and flip it so the underside dries evenly. The finished fruit leather should no longer be sticky but still flexible and chewy.
Cooling and Storage
30 minutesAllow the finished fruit leather to cool completely on a wire rack. Then cut into strips, roll up in parchment paper, and store in an airtight container at room temperature for up to 4 weeks or in the refrigerator for up to 3 months.
Pro Tip
Spread the fruit puree evenly about 4-5 mm thick on dehydrator sheets – too thin and it becomes brittle, too thick and it stays sticky.
