Mango Fruit Leather

Sweet fruit leather made from pureed mangoes, dried in a dehydrator into a chewy, sticky sheet. Ideal as a healthy on-the-go snack or as an accompaniment to cheese. Drying time varies depending on the thickness of the spread and water content of the fruit.

Preparation
15 min.Peel, pit and roughly dice the mangoes. Blend with lemon juice, honey and salt in a blender until smooth.
Spreading
10 min.Spread the puree evenly about 3-4 mm thick onto dehydrator trays lined with parchment paper. Leave edges clear.
Dehydrating
8-12 hoursDehydrate at 60-70 °C until the fruit leather feels dry and no longer sticks. It should peel away completely from the paper.
Storage
5 min.Allow to cool, then cut into strips and store in airtight containers or rolled in parchment paper. Shelf life: up to 2 months at room temperature.
Pro Tip
Spread the puree evenly and thinly (approx. 3-4 mm) – layers that are too thick dry unevenly and remain sticky in the middle.
