Raspberry Chia Fruit Leather

This nutrient-rich fruit leather combines the intense tartness of fresh raspberries with the crunchy, gel-like chia seeds. The chia seeds naturally bind the mixture and give the fruit leather a slightly grainy texture as well as valuable omega-3 fatty acids. A healthy and satisfying snack for sports and everyday life.

Puree Preparation
20 minutesPlace raspberries in a blender and puree finely. Pass the puree through a fine-mesh sieve to remove the seeds. Stir in maple syrup, lemon juice, and vanilla extract, taste and adjust. Then stir in the chia seeds and let the puree rest for at least 15 minutes so the seeds can swell.
Spreading
10 minutesLine dehydrator trays with non-stick silicone mats. Spread the swollen raspberry-chia puree evenly onto the mats using an offset spatula, aiming for a uniform thickness of 4-5 mm. Do not spread the puree too thin, as the chia seeds create a slightly more rustic texture.
Dehydrating
8-12 hours at 58-62 °CSet the dehydrator to 58-62 °C. Dry the fruit leather for 8-12 hours. After half the time, flip the fruit leather and dry for another 2-3 hours without the sheet underneath. The fruit leather is done when it is completely dry and feels slightly chewy but not brittle.
Cooling and Packaging
30 minutesLet the finished fruit leather cool completely, then cut into strips and roll individually in parchment paper. Store in an airtight jar or container. Keeps for up to 3 weeks at room temperature and up to 2 months in the refrigerator.
Pro Tip
Let the chia seeds soak in the raspberry puree for at least 15 minutes before spreading the fruit leather – this ensures the seeds distribute more evenly and bind the mixture better.
