Intensely red fruit leather made from fresh strawberries with a hint of vanilla. The natural pectin in strawberries provides good texture without additives. The finished leather is aromatic, slightly tangy and perfect as a healthy snack for children.

Ingredients(for 1 kg)

Fresh strawberries (washed, hulled)900 g
Lemon juice20 ml
Sugar or agave syrup30 g
Vanilla extract5 ml

Instructions

Preparation

15 min.

Wash and hull the strawberries, then blend with lemon juice, sugar and vanilla extract until smooth. Pass through a fine sieve if desired.

Spreading

10 min.

Spread the puree about 3 mm thick onto silicone mats or dehydrator trays lined with parchment paper. The layer should be uniformly thick throughout.

Dehydrating

7-10 hours

Dehydrate at 60-65 °C. Check after about 6 hours: the leather should no longer appear wet and should feel leathery. Edges may be done earlier.

Cooling & Storage

10 min.

Allow to cool completely, cut into strips or rectangles and roll in parchment paper. Keeps in an airtight container for up to 6 weeks.

Pro Tip

Use ripe, sweet strawberries – overripe fruit has less pectin and the leather becomes too soft. Frozen strawberries also work well; drain thoroughly after thawing.
