The combination of sweet, ripe strawberries and fresh basil creates an unusual but surprisingly harmonious fruit leather. The basil lends the classic strawberry flavor an aromatic, herbal depth. This fruit leather is an ideal snack and also pairs wonderfully with cheese boards.

Ingredients(for 1 kg)

Strawberries, fresh or thawed800 g
Fresh basil leaves15 g
Freshly squeezed lemon juice25 ml
Agave syrup35 g
Balsamic reduction (optional)10 ml

Preparation

15 minutes

Wash strawberries, remove the stems, and halve them. Wash basil leaves and pat dry. Combine all ingredients in a blender and process into a smooth puree. Pass the puree through a fine-mesh sieve to remove strawberry seeds and achieve an especially smooth texture.

Spreading and Preparation

10 minutes

Line dehydrator trays with silicone mats or special dehydrator sheets. Spread the strawberry puree evenly to a thickness of about 4 mm. Make sure the layer is as uniform as possible to achieve an even drying result.

Dehydrating

7-9 hours at 57-60 °C

Set the dehydrator to 57-60 °C and let the puree dry. After about 4-5 hours, flip the fruit leather. The fruit leather is done when it peels away from the surface easily without tearing and feels soft and chewy.

Portioning and Storage

10 minutes

Cut the cooled fruit leather into desired shapes using scissors or a sharp knife – strips, rectangles, or triangles. Wrap in parchment paper to prevent sticking and store in an airtight container.

Pro Tip

Add fresh basil just before blending to minimize oxidation and preserve the vibrant green color in the fruit leather.
