Franconian Bratwurst Spice Blend

A classic Franconian spice blend with marjoram and nutmeg, perfect for homemade Nuremberg or Coburg-style pork bratwurst.

Salt40 g
White pepper, ground18 g
Dried marjoram20 g
Nutmeg, freshly grated6 g
Caraway, ground8 g
Ginger, ground4 g
Lemon zest, dried and ground4 g

Preparation
3 MinutenFreshly grate the nutmeg and briefly rub the marjoram between your palms to release the essential oils.

4 MinutenCombine all ingredients in a bowl and mix thoroughly until a uniform blend is achieved.

3 MinutenTransfer the finished blend into an airtight jar, label it, and store in a cool, dark place. Shelf life approx. 6 months.
Pro Tip
Use freshly ground pepper and grate the nutmeg fresh just before mixing – this is what gives the blend its authentic Franconian flavour.
