Strawberry chips are crispy, intensely aromatic fruit slices gently dried in a dehydrator. Drying concentrates the natural flavors and fruit sugars of the strawberries, resulting in an irresistibly sweet snack. They are ideal as a granola ingredient, baking decoration, or healthy treat.

Ingredients(for 1 kg)

Fresh strawberries (washed, hulled)960 g
Lemon juice20 ml
Fine sugar (optional)15 g
Balsamic vinegar (optional, for depth)5 ml

Preparation

Thoroughly wash strawberries, pat dry, and remove stems. Slice into uniform 4-5 mm rounds using a sharp knife or mandoline. Drizzle with lemon juice.

Optional Marinating

15 min.

For a more intense flavor, optionally toss the slices with fine sugar and a dash of balsamic vinegar and let rest for 15 minutes. Then drain on paper towels.

Drying

8-12 hrs.

Place strawberry slices in a single layer without overlapping on dehydrator trays. Dry at 55-60 °C. Carefully flip after approximately 5 hours. Chips are done when completely dry and crispy.

Cooling and Storage

30 min. cooling time

Cool chips completely on a wire rack – they crisp up further as they cool. Store in an airtight container with a silica gel packet at room temperature for up to 4 weeks.

Pro Tip

Firm, slightly underripe strawberries yield the best results. Very ripe berries contain more water and take significantly longer. For extra-crispy chips, reduce the thickness to 3 mm.
