An unusual, deeply caramelized BBQ sauce based on Dr Pepper that develops complex flavors through reduction.

Dr Pepper350 ml
Ketchup150 g
Brown Sugar80 g
Apple Cider Vinegar60 ml
Worcestershire Sauce40 ml
Onion Powder8 g
Smoked Paprika8 g
Black Pepper (ground)5 g

Instructions

Reducing Dr Pepper

15 Minuten

Bring Dr Pepper to a boil in a pot over medium-high heat and reduce uncovered to about 175 ml. This takes about 15 minutes.

Adding Ingredients

5 Minuten

Reduce heat to medium and stir in ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, onion powder, paprika and pepper.

Simmering and Caramelizing

20 Minuten

Simmer the sauce over low heat for 20 minutes with occasional stirring until it thickens and develops a deep brown, glossy color.

Seasoning and Finishing

5 Minuten

Remove sauce from heat, season with salt and let cool for 5 minutes. Pass through a fine sieve for a smoother texture.

Pro Tip

Let the Dr Pepper reduce by half on its own before adding the other ingredients – this optimally concentrates its unique flavor.
