Country style ribs are thick-cut pork shoulder or blade chop pieces that become butter-tender through slow smoking and develop an intense meat flavor. A savory rub of sage, thyme, and paprika gives them a rustic, hearty character. Perfect for those who prefer juicy, boneless or low-bone rib cuts.

Preparation
10 min + 1 hour resting timePat country style ribs dry, trim excess fat, and apply rub evenly. Let rest at room temperature for 1 hour so the spices can penetrate.
Smoking
2.5-3 hoursHeat the smoker to 120-125 °C with beech and cherry wood. Place ribs directly on the grate and smoke until the core temperature reaches 80 °C and a golden-brown bark has formed.
Braising
1-1.5 hoursPlace ribs in a pan with some apple juice and butter and cover. Continue cooking in the smoker at 125 °C until the core temperature reaches 90-95 °C and the meat is very tender.
Glazing and Serving
15 minutesRemove ribs from the pan and place on the grate at 130 °C to glaze with BBQ sauce. Serve after 10-15 minutes.

Country style ribs often have varying thicknesses – uneven pieces can be shaped with toothpicks or small wooden skewers to ensure even cooking.
