Chinese Five Spice Rub

An aromatic blend of star anise, cinnamon and classic Chinese spices, perfect for duck, pork and beef.

Star anise (ground)25 g
Cinnamon (ground)20 g
Szechuan pepper (ground)20 g
Cloves (ground)15 g
Fennel seeds (ground)15 g
Ginger powder5 g
Instructions

Toasting
5 MinutenToast star anise, Szechuan pepper, cloves and fennel seeds in a dry pan over medium heat for 2–3 minutes until fragrant. Allow to cool.

Grinding
3 MinutenGrind the cooled spices together with the cinnamon in a mortar or spice grinder until fine.

Mixing and Filling
2 MinutenCombine the ground spice mixture with ginger powder, sift through a fine strainer and transfer to an airtight jar.
Pro Tip
Lightly toast the whole spices in a dry pan before grinding to activate the essential oils and intensify the aroma.
