Classic chicken wings are coated in a spicy rub and slowly hot-smoked before being finished with a sweet and smoky BBQ glaze. The low and slow cooking time makes the meat particularly tender and juicy. Perfect for parties and social BBQ evenings.

Smoked paprika10 g
Brown sugar10 g
Salt9 g
Garlic powder5 g
Ground black pepper4 g
Cayenne pepper2 g
Mustard powder2 g

Instructions

Preparation

20 min + 30-60 min resting

Pat wings dry, separate into pieces, and mix all rub ingredients. Coat wings evenly with the rub and let rest.

Smoking

2-2.5 hrs

Set the smoker to 120-140 °C using cherry and hickory wood. Spread wings on the grate and smoke indirectly until a core temperature of 74-80 °C is reached.

Glazing & Finishing

15-20 min

In the last 15-20 minutes, brush wings with BBQ sauce and raise the temperature to 200-220 °C to caramelize the glaze and crisp the skin.

Pro Tip

For extra crispy skin, finish the wings over direct heat at 220-250 °C for the last 10 minutes or raise the smoker temperature significantly.
