Pitted Cherries (fresh or frozen)200 g
Cola150 ml
Ketchup120 ml
Red Wine Vinegar50 ml
Brown Sugar40 g
Smoked Paprika6 g
Cayenne Pepper2 g

Instructions

Reduce Cola

Reduce the cola in a saucepan over medium-high heat by half, stirring regularly to prevent burning.

Cook Cherries

Add cherries and brown sugar to the reduced cola, stir and simmer over medium heat for 10 minutes until the cherries are soft.

Blend

5 Minuten

Blend the cherry-cola mixture smooth with an immersion blender, then strain through a fine sieve for an especially smooth consistency.

Finish the Sauce

Add ketchup, red wine vinegar, smoked paprika, and cayenne pepper to the blended cherry mixture, stir well, and simmer on low heat for another 10 minutes.

Season and Bottle

Remove sauce from heat, adjust seasoning with sugar, vinegar or salt, and pour into sterilized jars or bottles. Store in a cool, dark place.

Pro Tip

Let the cola reduce completely before adding other ingredients to achieve maximum caramelization. A splash of cherry liqueur further intensifies the cherry flavor.
