Instructions

1

Mix rub

5 min.

Mix all dry spices (paprika, cayenne, garlic powder, onion powder, salt, thyme) together well.

2

Prepare shrimp

10 min.

Wash shrimp and pat dry. Drizzle with olive oil, then rub the Cajun rub evenly on all sides. Let rest for 20-30 minutes.

3

Smoking

20-25 min.

Preheat smoker to 115-125 °C and add hickory wood. Thread shrimp on skewers or smoke on a grate until 63-65 °C core temperature is reached.

4

Rest and serve

5 min.

Remove shrimp briefly from the grate and let rest for 3-5 minutes. Serve with lime wedges and fresh cilantro.

Pro Tip

For extra juiciness, the shrimp can be briefly soaked in lightly salted water (20g salt per liter) for 15 minutes before applying the rub. The brine ensures better moisture retention during smoking.
