A classic German smoky spice blend with fine beech smoke salt, perfect for pork, kassler and bacon.

Beech smoked salt35 g
Fine sea salt15 g
Coarsely ground black pepper12 g
Sweet paprika powder15 g
Garlic granules10 g
Dried marjoram7 g
Ground caraway4 g
Ground allspice2 g

Preparation

Weigh all spices individually and prepare them. Lightly crush the marjoram between your fingers to release the essential oils.

Mix all ingredients thoroughly in a bowl until an even color and consistency is achieved.

Fill the finished blend into a clean, dry screw-top jar, label it and store it in a cool, dark place. Shelf life approx. 6 months.

Pro Tip

For a more intense smoky flavor, store the finished blend in a closed jar for 1-2 days before use to allow the aromas to meld.
