Blueberry fruit leather is a deep-purple, aromatically sweet fruit snack made from pureed blueberries, gently dried in a dehydrator. The high concentration of antioxidants in blueberries is largely preserved when drying at low temperatures. The leather works as a healthy snack, travel lunchbox addition, or natural candy substitute for children.

Ingredients(for 1 kg)

Fresh or frozen blueberries880 g
Honey40 g
Lemon juice25 ml
Vanilla extract3 ml
Chia seeds (optional, for texture)10 g

Preparation

15 min.

Wash blueberries (thaw frozen berries) and blend with honey, lemon juice, and vanilla extract in a high-speed blender until completely smooth. Optionally stir in chia seeds and allow to swell for 10 minutes.

Spreading

10 min.

Spread the puree evenly in a 4-5 mm layer onto lightly greased dehydrator sheets or trays lined with parchment paper. Keep the edges slightly thicker as they dry faster.

Drying

8-12 hrs.

Dry in the dehydrator at 57-62 °C until the leather is no longer sticky but still feels pliable and can be peeled cleanly from the surface. Check the center last as it takes longest.

Cutting and Storage

15 min.

Allow the finished blueberry leather to cool completely, cut into strips using scissors or a sharp knife, and roll in parchment paper. Store in an airtight container at room temperature for up to 2 weeks or in the refrigerator for up to 6 weeks.

Pro Tip

The blueberry leather stays evenly purple longer when the layer is applied no thinner than 4 mm. Layers that are too thin can quickly turn dark or brownish at the edges.
