Bold bison jerky with a Mexican-inspired chipotle lime marinade that combines smoky heat and fresh citrus notes. The lean bison meat absorbs the intense flavors excellently while remaining tender. A modern, aromatic jerky with powerful flavor and pleasant lingering heat.

Ingredients(for 1 kg)

Chipotle in adobo sauce, finely chopped25 g
Lime juice, freshly squeezed50 ml
Soy sauce60 ml
Honey20 g
Garlic powder6 g
Salt10 g
Lime zest4 g

Instructions

Prepare Marinade & Slice Meat

30 min

Finely chop chipotle peppers and mix with soy sauce, lime juice, lime zest, honey, garlic powder and salt to form a homogeneous marinade. Trim bison meat, slightly freeze and cut into uniform 5 mm thick strips.

Marinating

12-24 hrs

Submerge meat strips completely in the marinade, ensuring all strips are covered. Marinate in the refrigerator for at least 12, preferably 24 hours. Occasionally stir or turn the container to ensure even marinade penetration.

Preparation & Dehydrating

10 min + 7-9 hrs

Remove meat strips from the marinade, pat dry on paper towels and spread on dehydrator racks. Dehydrate at 65-70 °C. Flip after 4 hours. Due to the honey in the marinade, meat may stick slightly – place parchment paper under the racks if needed.

Finishing & Storage

20 min

Jerky is done when it bends without breaking and the surface appears slightly caramelized. Allow to cool completely. Store in vacuum bags or airtight jars. The chipotle flavors intensify further after one day of resting.

Pro Tip

Use chipotle in adobo sauce from a can and finely chop – these are smokier and more aromatic than plain chipotle powder. Add the zest of an organic lime for maximum citrus aroma.
