Vanilla Pear Chips

Delicate pear slices are flavored with real vanilla and a pinch of cardamom, then dehydrated into crispy chips. The natural sugar of the pear caramelizes slightly during drying, creating an intense aroma. An elegant snack or topping for granola and desserts.

Preparation
20 minutesWash pears, halve them, and remove the core. Slice into uniform pieces 3-5 mm thick using a mandoline slicer.
Seasoning
10 minutesMix lemon juice, vanilla extract, and honey into a marinade. Briefly coat pear slices in the mixture, then drain. Mix cardamom and powdered sugar and lightly dust over the slices.
Dehydrating
10-14 hoursPlace pear slices individually on dehydrator trays. Dehydrate at 57-65 °C, turning slices halfway through. The chips are ready when they are dry and slightly crispy.
Conditioning & Storage
1-2 daysAllow cooled chips to condition in an open jar for 1-2 days, shaking daily to equalize any remaining moisture. Then store airtight for up to 2 months.
Pro Tip
Use ripe but still firm pears. Overly soft pears are difficult to slice and tend to stick to the dehydrator trays.
