South African Biltong Spice

Traditional South African spice blend based on coriander and vinegar, ideal for beef and game meat when making biltong.

Ingredients(for 0.1 kg)

Coriander seeds (toasted, coarsely ground)40 g
Black pepper (coarsely ground)20 g
Coarse sea salt25 g
Brown sugar8 g
Sweet paprika powder4 g
Cayenne pepper3 g

Instructions

Toasting

5 Minuten

Toast coriander seeds in a dry pan over medium heat for 2-3 minutes, stirring constantly, until fragrant. Let cool.

Grinding

3 Minuten

Coarsely crush the cooled coriander seeds and black pepper in a mortar – the texture should still be visibly grainy, not finely ground.

Mixing

2 Minuten

Thoroughly combine all ingredients in a bowl until evenly mixed.

Filling

2 Minuten

Fill the blend into an airtight jar, label it and store in a cool, dry place. Shelf life approx. 6 months.

Pro Tip

Briefly dry-toast coriander seeds in a pan before coarsely grinding – this is the heart of authentic biltong and gives it its characteristic nutty flavor.
