South African Biltong Spice

Traditional South African spice blend based on coriander and vinegar, ideal for beef and game meat when making biltong.
Ingredients(for 0.1 kg)
Instructions
Toasting
5 MinutenToast coriander seeds in a dry pan over medium heat for 2-3 minutes, stirring constantly, until fragrant. Let cool.
Grinding
3 MinutenCoarsely crush the cooled coriander seeds and black pepper in a mortar – the texture should still be visibly grainy, not finely ground.
Mixing
2 MinutenThoroughly combine all ingredients in a bowl until evenly mixed.
Filling
2 MinutenFill the blend into an airtight jar, label it and store in a cool, dry place. Shelf life approx. 6 months.
Pro Tip
Briefly dry-toast coriander seeds in a pan before coarsely grinding – this is the heart of authentic biltong and gives it its characteristic nutty flavor.
