Soy sauce100 ml
Worcestershire sauce50 ml
Honey20 g
Garlic10 g
Black pepper5 g
Ginger3 g
Chili powder3 g

Instructions

Preparation

24 hours

Partially freeze meat, slice 3-5mm against grain. Marinate 12-24 hours.

Smoking & Drying

4-5 hours

80 °C, smoke 2 hours, then dryer. Bend test: bends + slightly cracks = done.

Pro Tip

Slightly freeze for slicing. Against the grain! Use dryer function.
